Starting out the week
Here it is, Monday again. I don't know how the weekend goes so fast, and this day creepsup as quickly as it does. But, here it is.
I got Lee dropped off at work a bit ago. It's nice to come back home now, and be able to cool my jets for a bit, before having to leave for work. I'll have to leave a little earlier today than normally, since I have to take a part back to O'Rilley's. Lee was going to work on the car, but as usual, something had to not go right. I ran Lee by O'Rilley's, to pick up a part that he needs to take the harmonic balencer off the Buick. I dropped him off at the house, then headed out to Landon's to pick them up, and come back to the house. Naturally, I can never get anyone moving as quickly as possible, so we didn't back here as soon as I'd hope. Of course, when we get back, Lee informs me that the part he got didn't work. They didn't have the part that he needed, so they made another suggestion, but, unfortunately, it didn't work. So, I have to take it back to O'Rilley's today, get our money back, and then Lee's going to see if he can find the part at one of their other stores. I just keep praying that we're going to have the buick running by Thanksgiving. I just really hate the thought of having to try and cram 7 people in our little car, and driving 3 hours to Lebanon.
As soon as I got home, I got my turkey taken out of the freezer so it can be unthawing. It will probably take it a couple of days in the refrigerator. I'm going to get it bakedWed. night, and have it sliced and on a platter ready to take to my mom's on Thursday. I am also going to be making the dressing too. I probably won't do that till Thursday morning. Here is a great recipe for dressing that I got from my m-i-l, Laura. Thought I'd post it, and maybe some of you might have a chance to try dressing, that never have had the opportunity to before. Hope you like it.
Dressing/Stuffing
A wonderful receipe from my mother-in-law, Laura Lee
two loaves of white bread torn into pieces (you can substitue one wheat for one white),
1 doz. eggs,
0-15 stalks celery finely chopped,
1 large onion finely chopped,
2 cans chicken broth,
salt, pepper and sage to taste
mix all ingredients completely in a very large mixing bowl. Mixture will be very soupy in texture. pour into a greased 9"x13" pan. Bake at 350 for approx. 1 hour, or until a knife inserted into the center comes out clean
For variety any of the following can be added. Fresh or canned mushrooms, oysters, approx. 1 cut of chopped walnuts or pecans

I've got tomorrow off, but have to work on Wed., so I'm going to be getting the things I need to cook my turkey and dressing tomorrow, rather than try and do it on Wed. Of course, I have the turkey, but I bake mine with lots of butter...real butter, and I normally don't have that around, so I will have to get that. Shoot, if I get outta work on time tonight, I may have the time to go get what I need, before I have to pick up Lee....oh, who knows what I'll do. lol
The weather's not suppose to be too bad today...about 51. Certainly not bad for this time of year. I think it's suppose to be this way for the next few days...down to about 47, I think they said, on Thanksgiving. I'll take it, cause I've seen Thanksgiving with snow...although it has been several years. And I certainly don't want that, since we will be traveling. Traveling on this weekend is dangerous enough, with out added snow, or ice. Thanksgiving is a very busy time on the highways, and unfortunately, wrecks and loss of life, always seem to happen, which is so tragic. So, we will not rush, and will be taking things very slowly, and carefully, on our way down.
I normally have Thursdays off anyway, so I don't get a extra day off this week, like others I work with, that normally work on Thursdays. So, it's off Tues., work Wed., off Thurs., and back on Fri. Then it will be the well deserved and looked forward to two day weekend, which is really gonna be nice. Unfortunately, for Lee, Thanksgiving may be the only day off he has till after Christmas, except for Sundays. It is going to be a 6 day a week job, till then. Christmas is a horribly busy time for the jewelry business!!!
Since Lee is planning on trying to find that part he needs, I guess that means he's gonna come home tonight, in the dark, and try to work on the car...he didn't really say that, but he works tomorrow, and wed., so I'm not sure when else he would do it..other than at night. So, I may just pick up pizza, something that's gonna be rather quick to eat, in case that's what he's going to do. I've got a coupon from Pizza Hut, for a lg./$12.99...not too bad.
So, let me think...I guess that's about all that's been going on since I was here last...and the next few days will be the typical rush, that goes on the few days preceeding Thanksgiving...making sure you've got everything you need, or everything done. But, it is all well worth it when you're able to enjoy the food, and the fellowship with family, friends, and all those we hold dear. It is ashame, that we can't learn to celebrate Thanksgiving everyday of our lives. It's a spirit we need to keep with us everyday that we live.
